To ensure durability, all knives are made from MAC Steel (AUS8) with a Rockwell hardness of 59, giving them extreme sharpness and long-lasting performance. The handles are crafted from PAKKA wood, a blend of natural wood and resin that provides excellent resistance to moisture.

Daigaku Imo – Candied Sweet Potatoes

Make your own candied sweet potato snacks, known in Japan as Daigaku Imo, with this simple recipe. Literally meaning “university potatoes,” this popular treat features chunks of sweet potato coated in a sweet and savory glaze made from sesame oil, sugar, soy sauce, and vinegar. It’s a beloved autumn snack among students — perfect for cozy evenings as the nights grow longer.

Ingredients:
• 1 sweet potato (about 300 g)
• 1 tbsp sesame oil
• 2 tbsp sugar
• 1 tbsp soy sauce
• 1 tsp vinegar
• 1 tsp black sesame seeds

Preparation:
Wash the sweet potato thoroughly and cut it into 2 cm pieces. Soak them in water, then microwave for 4–5 minutes until tender.

In a frying pan, combine sesame oil, sugar, soy sauce, and vinegar. Simmer over low heat for about 30 seconds, until the sugar dissolves.

Add the sweet potato pieces and cook for about 2 minutes on each side, until golden and slightly crispy.

Once caramelized, remove from the heat and sprinkle with black sesame seeds. Serve warm or at room temperature.
