To ensure durability, all knives are made from MAC Steel (AUS8) with a Rockwell hardness of 59, which also makes them extremely sharp. Vegetable Gyoza

Make perfect pan-fried gyoza with this easy-to-follow recipe. Gyoza are Japanese half-moon–shaped dumplings often served in Asian restaurants as an appetizer or side dish. This version features a flavorful vegetarian filling made with mushrooms. Serve these bite-sized delights with a little soy sauce alongside your main meal.

Ingredients:
• 1/2 onion
• 65 g mixed Asian mushrooms
• 50 g cabbage
• 1 tsp soy sauce
• salt
• pepper
• sesame oil
• 8 gyoza wrappers
• cooking oil
• dipping sauce
• gyoza press (optional)

Preparation:
Finely chop the onion, mushrooms (such as enoki or shiitake), and cabbage. Place them in a bowl and mix with soy sauce, salt, pepper, and sesame oil to taste.

Divide the mixture into eight portions and spoon each onto a gyoza wrapper. If you have a gyoza press, use it to seal the edges; otherwise, check out our pork gyoza recipe for tips on how to fold and seal gyoza by hand.

Pour about 70 ml of water into a frying pan, place the gyoza inside, and drizzle with a bit of sesame oil. Cover with a lid and cook for about 8 minutes, until the bottoms are golden and crispy.

Serve with gyoza dipping sauce and enjoy.

Tips:
– Tired of chopping? If you have a food processor, you can blend all the ingredients (except the wrappers and cooking oil) in the first step — it saves some arm work!
