The set of Japanese kitchen knives CHEF-32 is uniquely the only one that contains knives from two different series, i.e. from the CHEF series and the SUPERIOR series, because thanks to the unification of the design of the SB-105 knife, it complements knives of both series perfectly. All blades are made of steel with high corrosion resistance. A stable grip is provided by a handle with three rivets made of PAKKA wood, which is highly resistant to water absorption. Regardless of whether you are just starting your adventure with preparing dishes, or you are a professional chef and have already taken your first steps, this set of knives is worth having in your kitchen.

TH-80 is a versatile kitchen knife with recesses in which air pockets are created during cutting and prevent the slices from sticking to the blade. All parameters make this chef’s knife perfectly balanced and ensure high comfort of use. Due to the fact that it is a universal knife, it has many applications, it can be used for portioning meat, chopping or cutting both vegetables and fruit using various techniques. The perfect complement to this knife is the peeling knife from this set.

TH-50 is a kitchen knife for peeling, it can also be used for portioning, cutting small fruits and vegetables, as well as for auxiliary work, such as lubricating or crushing. The recesses made in the knife blade make it easier for the skins to come away from the knife during peeling, thus shortening the peeling time. Its handle is very comfortable and profiled to fit any type of hand. Using it makes work pleasant and, most importantly, prevents hand overload despite constant, repetitive movement during use.

SB-105 is a serrated kitchen knife with the longest cutting edge in the Superior series – 270 mm. It maintains the perfect proportion between the weight of the handle and the long blade, which makes working with it very comfortable and pleasant. The blade made of high-quality steel is very sharp and ensures excellent cutting quality. Sliced fresh bread, cold cuts or soft tomatoes will have smooth, even edges. Moreover, it is perfect for portioning roasted meats or shortbread meringue cakes. Thanks to the use of this professional knife, the dishes served will look exquisite and delicious on the plate. Onsen Tamago

Originally cooked in the warm waters of hot springs, tamago onsen eggs are silky on the outside but deeply cooked on the inside, making them great for ramen or katsu curry dishes. Alternatively,  eggs prepared this way will be delicious for breakfast or as a protein-rich snack.

• Eggs
• 1 teaspoon dashi broth powder
• 1 tablespoon light soy sauce
• 1 tablespoon of mirin

Remove the egg or eggs from the refrigerator well in advance to let them come to room temperature. 

Fill a pot with 1 liter of water and bring to a boil. Once the water begins to boil, add 1 cup of cold water and turn off the heat.

Using a ladle or spoon, gently place the eggs into the pot. Cover with a lid and set aside for about 30 minutes.

Sauce:

Add 100 ml of water to the pan and then bring to a boil. Add the dashi stock powder, soy sauce and mirin, then simmer for a minute or two. Set aside to cool,  then serve with eggs.
