Green Tea Soba Noodles

When the weather gets warmer, cool down with refreshing cold noodle dishes like this one. This green tea matcha soba combines the earthy flavor of soba infused with green tea, a savory umami-rich tsuyu dipping sauce, and fragrant toppings such as spicy wasabi and crispy tempura flakes. It’s the perfect way to refresh yourself on a hot summer day.
Ingredients:
• 180–200 g green tea soba noodles
• 50 ml tsuyu sauce
• 2 green onions, finely chopped
• wasabi paste
• chopped nori seaweed
• tempura flakes
Preparation:
Bring 2 liters of water to a boil and add the soba noodles. Cook for about 4–5 minutes, or until they reach the desired texture.
Once cooked, drain the noodles immediately to prevent overcooking. Rinse them 2–3 times under cold water, then let them dry for about 5 minutes.
While the noodles are drying, prepare the side accompaniments — tsuyu, chopped green onion, and wasabi.
Serve the soba on a wide plate or, if available, on a traditional zaru soba tray. Top with chopped nori and tempura flakes before serving.
