One of the cornerstones of MAC’s kitchen knife collections is the ORIGINAL series. In the 1950s, Mr. Kobayashi, while attempting to repair his damaged kitchen knife, accidentally rounded off the tip of the blade. He quickly realized that this modification made the knife safer to use while maintaining its full functionality. This discovery became the inspiration for creating a new generation of kitchen knives — a vision he brought to life in the following decade. The result was the ORIGINAL seriesunique Japanese kitchen knives, protected by a worldwide patent.

Kitchen knives come in many types, and one of the most essential is the chef’s knife — the primary tool in every professional kitchen. However, because chefs have different culinary tasks and personal preferences, there’s no single “perfect” knife for everyone. That’s why the chef’s knife, the most frequently used blade in daily work, is available in around 30 different configurations in our collection.

The CK-90 model stands out for its versatility and features a patented rounded safety tip with a hanging hole, allowing it to be conveniently stored on the wall above the kitchen counter. Gomoku Inari Sushi – Colorful Tofu Pockets with Seasoned Rice

Gomoku Inari Sushi is a classic Japanese dish that combines delicately sweet fried tofu pouches (inari) with sushi rice mixed with vegetables, mushrooms, and other flavorful ingredients known as gomoku chirashi (literally “five ingredients”). This dish is often enjoyed in Japan during picnics, festive occasions, or as part of a bento lunch, as it’s light, colorful, and easy to eat without utensils. Inari sushi also symbolizes prosperity and happiness, making it a popular choice for family celebrations.

Ingredients:
• 1 pack of gomoku chirashi sushi mix
• 450 g cooked Japanese rice
• 4 fried tofu pockets (inari)

Preparation:

  1. Prepare the rice following the instructions for the gomoku chirashi sushi mix – combine the seasonings and ingredients with freshly cooked hot rice.

  2. Allow the rice to cool slightly – it should be warm but not hot, to avoid damaging the delicate tofu pouches.

  3. Carefully open each inari pocket and gently fill it with the rice mixture, without overstuffing. Lightly press the rice with your fingers or the back of a spoon to help it hold its shape.

  4. Arrange the filled inari sushi seam-side down on a serving plate and enjoy as part of a meal with miso soup, tempura vegetables, or green tea.

Tips & Notes:
• In Japan, inari sushi is often served on cooler days or during outdoor gatherings, as it tastes just as good at room temperature.
• If you don’t have a traditional otoshibuta (drop lid) used in Japanese cooking, you can make one by cutting small holes in a circle of aluminum foil or parchment paper, or use a lid slightly smaller than your pot.
• For extra flavor, sprinkle the top with sesame seeds, chopped scallions, or pickled ginger before serving.
