AB-80

The ORIGINAL series of Japanese kitchen knives by MAC dates back to 1954. That year, Tatsuo Kobayashi, the founder of MAC, was working at a restaurant in Chicago when he accidentally dropped a kitchen knife, breaking off its tip. While trying to repair it, he discovered that reshaping the tip into a rounded edge with a sharpener made the knife not only safer but also perfectly usable again. This fortunate accident inspired the creative Tatsuo to design a line of safe and practical knives, now featured in the ORIGINAL, SUPERIOR, BLACK, and KIDS series. Their distinctive shape is protected by an international patent, and the ORIGINAL series, in particular, has gained great popularity in Scandinavia, where safety is highly valued.

Within the ORIGINAL series, the AB-80 is a versatile chef’s knife that serves as an excellent all-purpose tool — ideal for both professional chefs preparing multiple dishes daily and home cooks using it for everyday meals. The combination of high-grade MAC steel and exceptional sharpness allows for faster, smoother slicing of meats, herbs, fruits, and vegetables. Kitchen accidents involving sharp knives are quite common, especially in small or crowded spaces — that’s why the rounded tip design of the AB-80 enhances user safety while also preventing tip breakage. Despite its larger size, the knife is lightweight and perfectly balanced, ensuring precise and comfortable handling with every cut.

MAC Japanese kitchen knives are renowned worldwide and consistently receive top rankings and industry awards for their performance and craftsmanship.

The ORIGINAL AB model series also includes three smaller versions — AB-60, and AB-50 — to accommodate different needs and preferences. To maintain the knife’s exceptional quality and performance, proper care is essential. You can learn more about how to care for and maintain your knives in our detailed Knife Care Guide.

Yakiniku – Japanese Table Grill

Originally a Korean dish, Yakiniku was later adapted and embraced as a traditional part of Japanese cuisine. Gather around a table with a small grill in the center and cook a selection of tender meats and vegetables right at the table with this Japanese yakiniku recipe. Simple yet delicious, this shared meal becomes even better with the right choice of meats, vegetables, and a bold, savory-sweet yakiniku dipping sauce. Like many Japanese party-style dishes, it’s a perfect way to enjoy good food, good friends, and plenty of Japanese beer.

Ingredients:
• thin slices of beef
• large shrimp
• onion
• rehydrated shiitake mushrooms
• bell pepper
• leek

Yakiniku Sauce:
• 100 ml soy sauce
• 4 tbsp sugar
• ½ tbsp spicy chili paste (optional)
• 1 clove garlic, grated
• grated ginger
• 1 tbsp sesame seeds
• ½ tbsp sesame oil
• shichimi (Japanese chili powder)

Preparation:
To make the yakiniku dipping sauce, combine soy sauce, sugar, shichimi, grated garlic, and grated ginger in a bowl. Mix well until the sugar dissolves.

Add sesame seeds and stir, then pour in the sesame oil and mix until smooth. Pour a small amount of the prepared sauce into individual bowls for each person.

Slice the meat and vegetables into small, thin pieces before lighting the grill or heating a tabletop griddle.

Place the meat and vegetables on the grill and cook for a few minutes on each side until done. The thinner the slices, the faster they’ll cook.

When ready, remove from the grill, dip in the yakiniku sauce, and enjoy. Yakiniku pairs perfectly with steamed rice.

Tips:

  • Use a griddle, portable gas grill, and cooking chopsticks for an authentic setup.

  • You can grill many other vegetables of your choice — try adding zucchini, asparagus, or eggplant for variety.
