Japanese sando is an iconic sandwich served in Tokyo bakeries and modern bars. This dish perfectly highlights the importance of a good knife—thinly sliced ​​cabbage, perfectly cut bread, and aesthetically pleasing portions give even a simple sandwich a premium feel.

Sando with Japanese Cutlet and Cabbage – Recipe (Serves 2)

Ingredients:

  • 2 chicken or pork cutlets
  • 2 eggs
  • panko bread
  • flour
  • 4 slices of soft toasted bread
  • a handful of finely chopped cabbage
  • Japanese or classic mayonnaise
  • tonkatsu sauce
  • salt and pepper
  • oil for frying

 

Preparation:

  1. Thinly pound the cutlets and season with salt and pepper.
  2. Coat in flour, egg, and panko breadcrumbs.
  3. Fry until golden brown and crispy.
  4. Slice the cabbage very thinly with a sharp knife.
  5. Spread the bread with mayonnaise and tonkatsu sauce.
  6. Add the cabbage and the hot patty.
  7. Cut the sandwich perfectly in half with a sharp knife to maintain an even texture and neat layers.
