Beef Tataki

Beef Tataki is a classic Japanese dish in which lightly seared beef with a raw center is sliced ​​into thin, precise slices. A light sauce based on ponzu, sesame, and fresh ingredients enhances the natural flavor of the meat, creating an elegant and refined composition with exceptional lightness and intensity of flavor.

Beef Tataki Recipe (Serves 4)

Ingredients:

  • 500-700g good quality beef tenderloin or roast beef
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 clove garlic
  • 1 piece of fresh ginger
  • 1 tablespoon sesame seeds
  • Chives or spring onions
  • Daikon radish or cucumber, for serving

 

Tataki Sauce:

  • 4 tablespoons soy sauce
  • 2 tablespoons yuzu or lime juice
  • 1 teaspoon mirin
  • 1 teaspoon sesame oil
  • Optional: a dash of chili

 

Preparation:

  1. Clean the beef and pat dry with paper towels. Brush lightly with sesame oil.
  2. Preheat a pan or grill to high heat. Sear the beef very briefly on each side—about 30-45 seconds per side, ensuring the center remains raw or slightly pink.
  3. After searing, place the beef in ice water or refrigerate for a few minutes to stop the cooking process.
  4. Mix together the Tataki sauce ingredients. Add finely grated ginger and garlic.
  5. Slice the beef very thinly. For best results, use a sharp chef’s knife, which will preserve the meat’s structure and allow you to make long, smooth cuts without tearing the fibers.
  6. Arrange the slices on a plate. Pour over the sauce and sprinkle with sesame seeds and chives. Add thinly sliced ​​daikon or cucumber.
  7. Serve slightly chilled as an elegant appetizer or Japanese-style main course.
