AB-60

Tatsuo Kobayashi, the founder of MAC, was a creative visionary who, drawing on his years of experience as a professional chef, came up with the idea of designing a safe and practical kitchen knife. His firsthand knowledge of the culinary profession gave him a deep understanding of what chefs truly need. Over time, this led to the creation of the unique and original ORIGINAL series — a line of knives distinguished by its patented rounded safety tip and a functional hanging hole for vertical storage, both of which have become the hallmark of the series.

The AB-60 versatile kitchen knife from the ORIGINAL series features a medium-length, moderately wide blade and is extremely lightweight — a quality especially appreciated by many women. It is ideal for slicing small and medium-sized fruits, vegetables, meats, and cold cuts. Like all MAC knives, it is made from high-quality steel, ensuring exceptional durability and razor-sharp performance.

The ORIGINAL series is particularly recommended for users who prioritize safety — whether for the fast-paced environment of professional kitchens or for home cooks who may work at a slower pace and have less experience. Each knife includes a practical clover-shaped hole that allows it to be hung on the wall above the kitchen counter, keeping it always within reach. This method of storage also helps maintain the sharpness of the cutting edge, as it prevents friction with other utensils.

Those who have switched from standard knives to the ORIGINAL series appreciate the safety and functionality of models like the AB-60, noting that cutting the same ingredients now feels smoother and more efficient. As a result, cooking has become a more satisfying and enjoyable experience.

Proper knife maintenance, especially sharpening, is essential for long-term performance. We invite you to visit our website’s “Knife Sharpening” section, where you’ll find detailed instructions on how to sharpen your Japanese knives correctly.

Temaki Zushi – Hand-Rolled Sushi

Bring a touch of elegance to your next sushi meal with this Temaki Zushi (hand-rolled sushi) recipe. These cone-shaped sushi rolls look impressive but are surprisingly easy to make, taste amazing, and can be filled with any ingredients you like. Why not try combinations such as Spicy Beef with Lettuce and Mayo, Teriyaki Chicken, or Salmon and Avocado?

Ingredients:
• 200 g sushi rice
• 2 sheets of nori seaweed
• 50 ml sushi vinegar
• 1 tbsp soy sauce (optional)

Suggested fillings:
• canned tuna with mayonnaise
• fresh tuna
• salmon
• tamagoyaki (Japanese omelet)
• avocado
• crab sticks
• shrimp
• cucumber

Optional toppings:
• mayonnaise
• white sesame seeds
• black sesame seeds
• wasabi
• yuzu kosho (spicy citrus pepper paste)

Preparation:
Once the sushi rice is cooked, mix it with the sushi vinegar and let it cool before using.

Prepare the fillings by cutting them into thin strips, about 10 cm long. Cut each nori sheet in half.

On the rough side of a piece of nori, spread the sushi rice to cover the left half of the sheet. There’s no need to spread it all the way to the edges.

If desired, sprinkle sesame seeds on the rice for extra flavor.

Hold the nori horizontally in your left hand (you can do this from the start, but it’s often easier after spreading the rice).

Place your chosen fillings in the center of the rice. You can use any combination you like — salmon and avocado are a classic pairing.

To roll the temaki, fold the filled left side over the ingredients, then roll the right, smooth side of the nori around it with your hands to form a cone shape. Seal the edge with a small bit of moist rice.

Your Temaki Zushi is now ready to enjoy!

Tips:
• For smaller rolls and more variety, cut each nori sheet into quarters before assembling.
